Healthy Chow Mein



This has been one of my all time favorite dishes to make at home! Who knew it was going to be so darn easy, and even yummier than any fancy shmancy overpriced restaurant. I hope you enjoy this recipe as much as we did!


Healthy Homemade Chow Mein


1 Package Soba Noodles
1 Large Onion (sliced)
1 Red Pepper (cut in to strips)
1 Green Bell Pepper (cut in to strips)
1 crown of broccoli (cut into large chunks)
1 Bunch Green Onions ( chopped in large chunks)
1 whole head of napa cabbage (chopped)
3-5 tbsp Soy Sauce
1 tbsp sesame oil
1/2 Bunch Chopped Cilantro
3 Grated Garlic Cloves

Optional added ingredients: pineapple, bean sprouts, carrots, shrimp, chicken, beef, pork.

Garnish with sesame seeds, peanuts, and saratcha (hot sauce)

Directions:
-Cook the soba noodles as the package instructs, put in to a bowl and mix with peanut oil or veggie oil.

-Grab your wok and add about 2 tbsp of peanut oil or veggie oil. Make sure it gets super hot almost smoking (the oil)

-Stir fry all of the veggies separately, as soon as one veggie type is done put it in a large bowl.

-As soon as you are done with all the veggies/proteins/fruits add the noddles to the wok with 1 tbsp peanut oil.

-Add in the soy sauce, the sesame oil, as well as the garlic to the pan and mix really really well.

-Once the noddles are nicely heated through add in all the veggies and other stuff once everything is heated through serve up with some yummy garnishes.

Healthy Honey Walnut Shrimp




Alright so I told you about our little problem of lacking any good Chinese food around our area, and so this brings us to my next dish....that's right honey walnut shrimp. This one was a bit hard to really change just because the original is so calorie dense, don't get me wrong I was all over pinterest a couple of weeks back pining and drooling over all the wonderful recipes but mike and I really wanted something a bit lighter. So without further a due......

Healthy Honey Walnut Shrimp


Serves 4-6



For the candied walnuts:

1 cup Water
1 cup Sugar
1 cup walnuts

Bring the water to a boil in a small pot.
Add the sugar, and let it boil until the water looks a little bit golden around 6 minutes or so.
Next add in the walnuts, and let them boil for about 4-6 minutes.
Drain all the excess sugar water and lay the walnuts on waxed paper in a single layer to dry quicker.

For the shrimp:

2 Pounds of Shrimp (deveined and shelled) also if frozen defrosted
Salt and Pepper to taste

Preheat oven to 350.
Oil a cookie sheet.
In a bowl combine shrimp, and season with salt and pepper.
Mix well.
In a single layer lay out the shrimp and bake for about 10-15 min, or when opaque in color. (cooked through)


For the sauce:

1 Tbsp Mayo
2 Tbsp Sweetened condensed milk
3 Tbsp Honey
2 Tbsp Lemon juice

Mix in a small bowl.
Drizzle over the shrimp.


Directions to combine:

Once the shrimp are done baking plate up and drizzle with the sauce, and garnish with the candied walnuts.
Enjoy!

Rice or chow mien or just some simple roasted veggies go great with this recipe! Remember to have fun, and to enjoy cooking!

Homemade Wonton Soup





So the hubs and I have been trying different Chinese restaurants here is sac, and let me tell you how disappointed we are in the selection! I finally said forget this I'm making it myself, so we went down the list of favorite Chinese dishes we enjoy and agreed that Wonton Soup should start this journey! :) SO here it is ....

Ingredients:
1 Package Wonton Wrappers
8 cups Chicken Stock
2 tsp Sesame Oil
1 Tbsp Soy Sauce
1 Bunch Bok Choy
2 Stalks Green Onions, thinly sliced
Sea salt to taste
Pepper

Filling:
8 oz. Ground Chicken/Pork
6 oz. Peeled Shrimp, finely chopped
1 tsp Minced Ginger (fresh)
1 Tbsp AP Flour
1 tsp Sesame Oil
1 Tbsp Soy Sauce
1/4 tsp Pepper
3/4 tsp Sea Salt



Instructions:


-Combine the wonton filling ingredients and mix well.
-Place about 1-1 1/2 tsp of filling in the center of the wrapper.Seal the edges of the wrapper with water and wrap the wonton. (like a big ravioli)
-Blanch the veggies in a saucepan with boiling water and 1/2 tsp of salt. Cook for about a minute, drain and set aside.
-Bring a saucepan of water to a boil with a few drizzles of cooking oil. Cook the wontons for about four minutes. Remove the wontons with a slotted spoon and divide the portions into each bowl.
-Bring the chicken stock to a boil. Add the sesame oil, soy sauce, and sea salt to taste.
-Ladle the chicken stock into the bowls of wontons. Top with veggies, chopped scallions, some pepper, and sirracha (hot sauce).

Perfect way to resume blogging......


It has really been a long while since last time I updated this thing. Well hopefully this will get more frequent.... The writing that is! ;)
here is one of my recipes that I have developed for my new healthy lifestyle.




Mixed Berry Oatmeal Muffins

Makes 12 Muffins

1 1/2 cups Old Fashion Oats
1 cup mashed bananas (2-3 super super ripe bananas)
1 cup unsweetened applesauce
1/6 cup dried cranberries (or any other dried fruit)
2 cups frozen berries
A pinch of cinnamon

Preheat oven to 350
Mash the super ripe bananas in a large bowl
Add the applesauce, cranberries, and the cinnamon
At the last minute add the frozen berries to the mix
Line the muffin pan and lightly spray with Pam
Fill the muffins all the way up (they do NOT rise)
Bake for 35 minutes
Put on a cooling rack as soon as they come out of the oven
Enjoy

*** they keep well in a airtight container in the fridge unto 5 days
